I survived day one after detox.

New (old) foods should be introduced slowly.

I started with an egg for breakfast and bolognese sauce with just a half glass of wine for dinner :)

Well done I think :)

 

I write despite this unhuman hour because tomorow I will be travelling. Yay!

 

My treats on the last day of detox were DATE BALLS, confused with chocolate balls by several Swedes and with “chestnuts” by one Pole. Funny, because the only common ingredient in both cases were the coconut flakes ;) Anyhow KICK ASS delicious, and raw! Confirmed by my Dear Husband who LOVES chocolate.

 

So, how is it done?

Soak a handful of cashew nuts and a handful of almonds

Chop about 10 dates

 

Add few raspberries

Tea spoon coconut oil

Tea spoon of hemp protein

 

And mix the whole thing together with a blender, not more than 10 seconds

Add sesame and pumpkin seeds (you can also save some chopped almonds and add them now if you want some crunch) after blending and roll into smaaaaall balls.

 

Roll them in coconut flakes and ENJOY!

Today I am one step away from facing a new stage of my recovery.

Post DETOX life and questions like: How to REMAIN clean? How not to fall back into bad habits? How not to WASTE all this job and effort I made those last 21 days?

My Clean guru, Dr. A. Junger says so wisely: “See what resonates with you, try things out, keep an open mind and a sense of humor, and above all, view your life as a fantastic journey where some of the biggest toxins you’ll encounter are actually the STRESS and WORRY created from trying to live too ‘perfectly’.”

Ta-da! Can you put it any better? So I say to myself today: “Kasia, relax, cheer up, it will be brilliant! Why shouldn’t it be?” …”As long as you avoid PERFECT!”

The notion of “perfect” is a huge thorn in my eye. I will touch on this subject later. (Sure I will!!!)

Now when you have seen my naughty mushroom noodles in the previous post, so delicious and still so DETOX-friendly, I thought I might as well show you few of my other KICS ASS dishes (do you notice how I slowly try to make you try this CLEAN stuff??? )


Chicken breast covered with sesame seeds fried in garlic oil served with cauliflower and parsnips (Pasternak/korzen pietruszki/palsternaka) pure (instead of mushed potatoes!) and raw, green salad (sugar snaps, avocado and fresh parsley):

 


Vegetable and chicken stir fry with soya sauce (forbidden during detox but I am a rebel!!) garlic and ginger. I also used a very cool product: seaweed noodles (“kluski” z wodorostow, sjögräsnudlar). Let me know if you want to learn more about them:

     


Raw salad with E.V.olive oil seasoned with fresh garlic, lemon zest, rosé pepper and apple cider vinegar. I also added quinoa, pumpkin and sesame seeds. This one actually looks better than it tasted ;)

        


The last one, a super tasty sallad made of raw letuce, cucumber and carrots and also stir fried garbanzo (cieciorka/kikärtor) and green and yellow beans which I “blanched” in a slightly sour dressing and mixed with the rest of ingredients. Covered with sesame and flax (siemie lniane/linfrön) seeds. Mmmmm:

     


I hope that my pictures made you hungry and soooo interested in CLEAN food.

As for me, I am exhausted

I might be a food freak.

How otherwise to explain the fact that a pan filled with golden fried mushrooms makes me excited?


Let me show you how I turned an ordinary lunch into a 50 Shades of Grey experience.

After all it is my last DETOX lunch, for this time :)


1. Boil a portion of buckwheat noodles (makaron gryczany/bovetenudlar):


2. Fry some mushrooms, onion and garlic golden brown in a pan (I used coconut oil). Season with salt, black pepper and parsley (pietruszka/persilja).

 



3. Toss the noodles into the pan and mix. I topped this dish with raw veg. sallad fresh basilica and a generous splash of E.V olive oil directly on the plate.

 

Othervise it looked a bit... GREY

Look at the cute beds I prepared for our chicken :)
I might have hard time trying it though after spliting it in halv. It was not a pleasant job I have to admit.
Anyhow, our chicken will "rest" in the oven for more than an hour.
How much rest will you get today? :)
I wish you PLENTY!

So true!

Meanwhile I explore new tastes and combinations for my morning and evening liquid treats during detox, my lunch meals were leaving me kind of... bored?


But not today!

Look what I created, just for myself:)

   

Corn chicken breast covered with caramelised onions, chestnut maschrooms and squash.

Green sallad witch radisch and sugarsnapps and pesto dressing.

In my homemade pesto I used soaked sunflower seeds and skipped parmigiano, which I love but I am dairy free a few days more. A dash of lemon zest made me almost jump on a kitchen table and DANCE. It was sooooo good!

        


What can I say? A meal prepared with so much care and reflection was really needed today. And it was worth it. Even the back pain after washing dishes!

I wish I could serve you all this meal :)

I have just learned to make my own almond(+haselnut) and cocnut milk at home.

Store bought ones do not tickle my fancy, honestly, and they are never really pure.

 

My almond and haselnut milk tasted a bit...raw, for lack of a better word. On the other hand today’s coconut milk became creamy, silky and mild.

The procedure is almost the same for both but preparation differs.

 

ALMOND

Soak your almonds/nuts (if male, do not take it figuratively!) over night, at least 8h

       

Blend with pure cold water (about 2 minutes), use one part nuts to two parts liquid, adjust the amount of water to the thickness you prefer

(I added coconut nectar and vanilla powder to taste, perhaps it was too little since the taste was harsh. Also, I did not peal the nuts.)

You can also throw in couple of deseeded and soaked dates for sweetness.

 

Drain through a cheesecloth into a clean and dry container.

   

 

COCONUT

I used coconut flakes but I guess raw coconut meat would be even better.

 

No soaking is needed but you add hot water to the blender. After blending for about 2 minutes I let the mixture rest 10 minutes before I drained it. 

The final result:

 

 

I add my milks to fruit smoothies along with hemp protein. Sometimes I top them with raw cacao powder, cardamon, or dates for sweetness.

 

Last but not least: The squised, dry nut meat can be used for baking or pancakes. You can even roast it and top your muesli with it. Enjoy!
